А что если записи для Linux 2.6.31-14-generic удалить совсем?
Что если удалить выделенные жирным строки? Будет ли работать загрузчик?

можно, но при следующем update-grub2 эти записи восстановятся. Grub 2 недаром же Grub 2, там не там просто все корректируется, как в предыдущем - недаром в самом начале grub.cfg написано -

конкретно в случае с этими записями- это записи старых ядер, удали сами ядра,в симантике например, в поиске набираешь "2.6.31-14" и удаляешь три пакета.
потом install-grub2 - и все, нет ядра, нет и записей....
Вообще же вот тут хорошо расписано про новый grub, я там много для себя почерпнул..
